Growing up Italian, it is a must to know how to make tomato sauce, this way when you have your own family you can carry on the traditional Italian Sunday lunch. BUT, we are not in the year 1952 and for some reason the generation of today is very much on the go. We rarely have time to do what we want to do because we are always running around like chicken without a head! Therefore, here is my take on Italian tomato sauce.
INGREDIENTS
- Olive oil
- 2 jars of "La San Marzano Fresh mashed tomatoes" (makes enough for 450 grams of pasta, tomato jars can be bought at Costco or any other grocery store)
- Salt
- Ground Pepper
- Sugar
- Oregano
- Dried Basil (can use fresh basil)
- Chili pepper flakes (optional)
- 1 Large Onion (if you're not crazy about onions only use 1/2 a large onion or 1 small onion)
- 3 Garlic cloves
PREPERATION
STEP 1:
- Chop onion into small pieces
- Remove all peel from garlic cloves (do not chop, keep whole)
- Place a pot over the stove at low to medium heat
- Throw in the onions and the garlic cloves
- Add olive oil (just enough to cover a 1/4 of the garlic cloves)
STEP 2:
- Once onions have turned golden pour in the 2 jars of "La San Marzano Fresh mashed tomatoes"
- Add 1/2 tablespoon of salt (may need to add more salt as cooking process continues)
- 1 Teaspoon of ground pepper
- 1 Teaspoon of sugar
- 1 and a 1/2 teaspoons of Oregano
- 1 and a 1/2 teaspoons of Basil
- 1 small teaspoon of chili pepper flakes (optional)
STEP 3
-Once step 1 and 2 have been completed let the tomato sauce simmer on low for 1 to 1.5 hours
- If you think the sauce is too thick for your liking add 1 to 2 cups of water (i added 2 cups)
IMPORTANT
-When making tomato sauce you must continuously watch over it and you must stir the sauce every few minutes. I stir every 5 minutes just because i'm paranoid about burning the sauce

Don't forget about those garlic cloves!
Half way through the cooking process...
- Find the 3 garlic cloves and squish them with a fork until smooth and then throw them back into the sauce.
-Taste the sauce to see if extra salt, herbs or spices need to be added
YUMMY!
We decided to use curly pasta this way the sauce gets wrapped around the curls of the pasta. We also added some mozzarella to our dish!
BONUS TIP: This tomato sauce can also be used as a meat sauce by adding minced meat into it or it can easily be turned into a rosé sauce by adding cooking cream!
